Instructions

  • Set your Instant Pot to the sauté function. Add olive oil, followed by the minced garlic and chopped onions. Cook for 2-3 minutes, stirring occasionally, until they are softened and fragrant.
  • Turn off the sauté function. Pour the chicken broth into the Instant Pot. Then, add the chicken breasts, both types of white beans (navy and Great Northern), drained diced tomatoes with green chilis, Better Than Bouillon, and all the specified seasonings (reserving salt and pepper for later).
  • Secure the Instant Pot lid, making sure the sealing valve is in the “Sealing” position. Cook on Manual (or Pressure Cook) at high pressure for 20 minutes.
  • Once the pressure cooking cycle is complete, allow the pressure to naturally release for 10 minutes. After 10 minutes, carefully quick-release any remaining pressure by turning the valve to “Venting.”
  • Open the pot, carefully remove the cooked chicken breasts, and shred them thoroughly using two forks. Return the shredded chicken to the Instant Pot.
  • Turn the Instant Pot back to the sauté function. Add the softened cream cheese, shredded Colby and Monterey Jack cheese, frozen corn, and season with salt and pepper to your preference.
