  • ¼ cup heavy whipping cream
  • ½ red pepper, finely chopped
  • ½ green pepper, finely chopped
  • 1 cup red onion, finely chopped
  • 1 cup shredded cheese (I did ½ gouda, ½ reduced-fat cheddar)
  • Salt and freshly ground black pepper to taste
  • 1 cup water (for Instant Pot)

Instructions

  1. Add the whole eggs, egg whites, cottage cheese, heavy whipping cream, half of the shredded cheese, and a pinch of salt and pepper to a blender. Blend for 30-45 seconds until the mixture is perfectly smooth and well combined. This step is crucial for achieving the signature custardy texture.
  2. Pour 1 cup of water into the inner pot of your Instant Pot. Place the trivet (which typically comes with your Instant Pot) at the bottom of the pot.
  3. Carefully place your silicone egg bite mold (or baby-food container) onto the trivet inside the Instant Pot. For a 6-quart Instant Pot, a 9-compartment mold fits snugly, which is perfect for this recipe.

  6. Cover the silicone mold with its lid. If your mold’s lid doesn’t snap perfectly tight, that’s fine; simply ensure the egg bites are covered to prevent condensation from dripping onto them.
  7. Secure the lid on your Instant Pot and ensure the sealing valve is set to the “Sealing” position. Select the “Steam” setting and set the cooking time for 12 minutes.
  8. Once the cooking cycle is complete, allow for a natural pressure release (NPR) for 10 minutes. After 10 minutes, carefully quick-release any remaining pressure by turning the sealing valve to “Venting.”
