Instructions

Instant Pot Instructions

  • Combine all of the chopped apples, cinnamon sticks, ground cloves, sweetener, and water in the Instant Pot’s inner pot. Ensure the water just covers the apples.
  • Secure the lid and set the valve to the sealing position. Cook on Manual (or Pressure Cook) High Pressure for 10 minutes. This initial cooking softens the apples and releases their juices.
  • Once the cooking cycle is complete, perform a quick release of the steam. Carefully open the pot once the pressure has fully dropped.
  • Using a hand blender (immersion blender), carefully puree the mixture directly in the pot. Alternatively, you can mash the apples with a potato masher for a chunkier cider. Exercise caution as the mixture will be very hot and can splash. Keep the blender fully submerged while operating.
  • Close the lid again and cook on Manual (or Pressure Cook) High Pressure for an additional 5 minutes. This second cooking phase further melds the flavors and ensures a smooth consistency.
  • Perform another quick release of the steam. Once safe to open, carefully remove the lid.
  • Strain the entire mixture through a fine-mesh strainer into a large bowl or pitcher, pressing down on the solids to extract as much liquid as possible. Discard the cinnamon sticks and save the strained apple pulp for applesauce or other uses.
  • Serve your warm caramel apple cider immediately, topped with a dollop of whipped cream, a drizzle of sugar-free caramel sauce, and a sprinkle of ground cinnamon, if desired.

Slow Cooker Instructions

  • Place all of the chopped apples, cinnamon sticks, ground cloves, sweetener, and water into your slow cooker. Ensure the water adequately covers all the apples.
  • Cover and cook on high for 2.5 to 3 hours, or on low for 6 to 7 hours. The apples should be very soft and tender when done.
  • Once cooked, carefully open the slow cooker. Using a hand blender, puree the apple mixture until smooth. Alternatively, mash thoroughly with a potato masher for a slightly thicker texture.
  • Return the lid and continue to cook for an additional hour on low, or 30 minutes on high. This allows the flavors to further deepen and the cider to reach its optimal consistency.
