Marinara Sauce

  • 12 oz crushed tomatoes
  • 4 garlic cloves chopped
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 teaspoon oregano
  • 1 tablespoon basil fresh
  • ½ onion chopped
  • cup dry white wine
  • 1 teaspoon Italian Seasoning
  • salt and pepper to taste

Lasagna

  • 1 pound ground beef
  • 6 oven-ready, no boil lasagna noodles
  • 1 cup fat-free ricotta cheese
  • 4 cups spinach
  • 1 cup Lite mozzarella cheese shredded
  • ½ cup Parmesan reggiano shredded
  • 2 tablespoon cheddar cheese shredded
  • 1 egg
  • salt and pepper to taste

Instructions

 

Marinara

  • In large sauce pan or skillet, heat olive oil. Add chopped onions, 3 cups of spinach, and minced garlic. Cook until the vegetables are tender and fragrant. Stir in crushed tomatoes, Italian seasoning, oregano, fresh basil, salt, pepper, and dry white wine. Place the bay leaf on top.
  • Simmer the sauce on low heat for 20 minutes to allow the flavors to meld. Remember to remove the bay leaf before proceeding.

Lasagna Assembly and Pressure Cooking

  • In a separate skillet, cook the ground beef over medium-high heat until fully browned. Season with salt and pepper to taste. Break the beef into small, uniform chunks as it cooks.
  • Drain any excess grease from the beef. Then, add the prepared marinara sauce to the ground beef. Stir well to combine, ensuring the beef is thoroughly coated in the sauce.
  • In a mixing bowl, combine the egg, fat-free ricotta cheese, the remaining fresh spinach (1 cup), and shredded Parmesan Reggiano. Mix thoroughly until all ingredients are well incorporated, forming a creamy ricotta mixture.
  • Begin layering your lasagna in the 6-inch baking pan. Start with a generous layer of the meat-marinara sauce mixture on the bottom of the pan. This initial layer of sauce is crucial to ensure the bottom noodles soften properly during pressure cooking. Follow with a layer of the ricotta mixture.
  • Carefully break the no-boil lasagna noodles into smaller pieces, sizing them to fit your round pan. Arrange these noodle pieces over the ricotta layer.
  • Add another layer of the meat-marinara sauce, followed by more of the ricotta mixture. Sprinkle generously with Lite mozzarella cheese.
  • Continue building layers in this sequence: noodles, meat-marinara sauce, ricotta mixture, and mozzarella cheese, until you run out of ingredients or reach the top of your pan.
  • For the final layer, ensure it is topped with sauce and then sprinkle the shredded cheddar cheese evenly over the very top.
  • Cover the top of the lasagna pan tightly with aluminum foil. This prevents any steam or condensation from entering the lasagna during pressure cooking, which could make it watery.
  • Pour 1.5 cups of water into the inner pot of your Instant Pot. Place the metal trivet (which usually comes with the device) inside the pot. This elevates the lasagna pan.
  • To create a foil handle (sling), take a large piece of aluminum foil and fold it in half lengthwise to create a sturdy strip. This will be used to wrap around your lasagna pan, allowing you to easily lower it into and lift it out of the Instant Pot.
  • Place the foil handle (sling) into the Instant Pot, forming a U-shape, ensuring the ends extend above the pot’s rim. Carefully place your covered lasagna pan in the middle of the pot, resting it on the trivet and within the foil sling.
  • Secure the lid on your Instant Pot and ensure the sealing valve is in the “Sealing” position. Set the Instant Pot to manual pressure cook on high for 20 minutes. Once the cooking cycle is complete and the Instant Pot beeps, allow a 10-minute natural pressure release (NPR). This means you do nothing for 10 minutes, letting the pressure dissipate naturally. After 10 minutes, carefully switch the sealing valve to “Venting” to quick release any remaining pressure.
  • Using the foil handles, carefully lift the lasagna pan out of the Instant Pot. Unfold the foil cover and transfer the pan to a baking rack to cool. Allow the lasagna to cool for at least 10-15 minutes (ideally to room temperature) before slicing. This allows the layers to set properly, making for cleaner cuts and a more satisfying texture.
  • To assist with removing the lasagna from the baking pan, especially if using a springform, you can place the pan on top of a sturdy jar or similar object. Then, gently press down on the sides of the pan to release the lasagna onto a serving platter.
