Ingredients

  • 1 habanero Chopped. Authentic Jerk uses scotch bonnet peppers. If you have access to these, feel free to use them. Habanero is a close substitute.
  • 1 tablespoon soy sauce Can substitute liquid aminos or coconut aminos.
  • 2 tablespoons fresh lime juice
  • cup pineapple juice
  • ½ cup chopped onion
  • 3 green onions (scallions) Chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon fresh ginger You can use ¼ teaspoon of ground ginger.
  • ½ teaspoon nutmeg
  • 1 teaspoon ground allspice
  • 3 garlic cloves Minced
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 4 chicken thighs I used bone-in, skin-on thighs for best flavor and texture.
  • 2 teaspoons Creole Seasoning I used Tony Chachere’s.

Instructions

  1. Combine all of the marinade ingredients (habanero, soy sauce, lime juice, pineapple juice, onion, green onions, cinnamon, fresh ginger, nutmeg, allspice, garlic cloves, Creole seasoning, salt, and pepper) in a blender. Blend well for about 30 seconds until smooth.
  2. Rinse the chicken thighs and pat them thoroughly dry with paper towels.
  3. Place the dried chicken thighs in a large Ziploc bag or a non-reactive bowl. Pour about half of the blended marinade over the chicken.
  4. Seal the bag tightly (or cover the bowl) and refrigerate for at least 2 hours, preferably overnight (up to 24 hours), to allow the flavors to meld. Reserve the remaining marinade for later.
  5. Add the olive oil to the Instant Pot inner pot.
  6. Select the “Sauté” function on your Instant Pot. Once hot, carefully place the marinated chicken thighs, skin-side down, into the pot. Brown both sides of the chicken for 4-5 minutes total until a golden crust forms. You may need to do this in batches to avoid overcrowding the pot.
  7. Drizzle the remaining reserved marinade over the browned chicken in the Instant Pot.
  8. Cancel the “Sauté” function. Close the Instant Pot lid and set the sealing valve to the “Sealing” position. Cook on “Manual” or “High-Pressure Cooking” for 14 minutes.
  9. Once the cooking cycle is complete, carefully perform a quick release of the steam by turning the sealing valve to the “Venting” position. Stand clear of the steam.
  10. Open the lid and carefully remove the chicken thighs. Allow them to cool slightly before serving. Serve hot with your favorite side dishes.

Notes

Habanero and scotch bonnet peppers are very HOT. Be sure to be extremely careful during use; wearing gloves is recommended when chopping. If you prefer a less spicy marinade, jalapeños can be used as a substitute, or you can reduce the amount of habanero.
