  • 1 cup shredded Colby and Monterrey Jack cheese
  • 3 oz cream cheese
  • 5 oz jumbo lump crab meat
  • 5 oz lobster meat
  • 1 pound shrimp Peeled and deveined

  2. Add in the broth, beans, diced chilis and tomatoes, homemade chili seasoning, and Better than Bouillon (if using). Stir everything well to combine.
  3. Lower the heat to medium-low, cover the pot, and simmer for 15-20 minutes to allow the flavors to deepen.
  4. While the chili simmers, season the shrimp, lobster, and crab with the seafood seasoning.
  5. Uncover the pot and add the shredded cheese, corn, cream cheese, and the seasoned seafood.
  6. Adjust the heat to medium. Stir gently and cook for 5-6 minutes, or until the cheese has completely melted and the seafood is cooked through and opaque. The chili will thicken further as it cools.
