  • 10-15 sliced strawberries

Instructions

  1. Combine the tequila, orange juice, and freshly squeezed juice from the limes in a blender.
  2. The mixture will become somewhat foamy. Pour the mixture into the popsicle mold, being careful not to fill the molds to the very top. You will need room for the fruit and stick.
  3. Add the strawberry slices to the mold with the liquid. You may have to use a knife or popsicle stick to gently press the fruit down into the mold to ensure even distribution.
  4. Freeze for two hours. This initial freeze will allow the mixture to become slushy, making it easier to insert the popsicle sticks without them tilting.
  5. Remove the mold from the freezer and carefully add a popsicle stick to each. The mixture should be slushy enough to hold the sticks upright.
  6. Return the molds to the freezer and freeze for an additional 6-8 hours, or preferably overnight, to ensure they are completely solid.
  7. To remove the popsicles from the mold, run warm water over the outside of each individual mold for approximately ten seconds. This will loosen the popsicles from the sides.
  8. Gently pull the popsicles out of the mold and serve immediately for the best experience.

Notes

When tequila freezes, it tends to create a creamy texture rather than a hard, ice-like consistency. Therefore, these popsicles will not be rock-solid once removed from the mold. They will have a consistency similar to a frozen margarita. I recommend serving them immediately, and if you’re serving them outdoors or want to slow down melting, consider using wine glasses or small cups to hold them as they are consumed.

If you plan to add sugar or salt, it’s best to incorporate it before you blend the ingredients. After blending, taste the mixture to determine if you need more. Start with a small amount, perhaps a teaspoon, and gradually add more until you reach your desired balance of flavors.

These popsicles are incredibly easy to make once you have a good popsicle mold. The mold I recommend (linked above) comes with a lid. While some molds use lids to hold sticks, I opted not to use the lid for this recipe. I was concerned the lid might freeze directly onto the mixture, potentially making it difficult to remove without disturbing the popsicles. Instead, I simply placed the mold without the lid on a flat surface in my freezer, ensuring the popsicles froze evenly.
