Selecting the Perfect Beans for Your Chili
While a combination of red kidney beans and black beans is a personal favorite for their contrasting textures and flavors, the beauty of chili lies in its adaptability. Feel free to experiment with a variety of beans to suit your taste and pantry. Here are several excellent options, each offering a unique contribution to your Buffalo Chicken Chili:
- Kidney Beans: A timeless choice for chili, kidney beans bring a robust, hearty texture and a subtle, earthy flavor that beautifully complements the tang and spice of the buffalo sauce. Both light and dark kidney beans work wonderfully, providing a classic chili experience.
- Cannellini Beans: Also known as white kidney beans, cannellini beans are celebrated for their mild flavor and exceptionally creamy texture. They readily absorb the rich flavors of the chili, adding a delicate, buttery undertone that enriches the overall profile of the dish.
- Great Northern Beans: These beans offer a mild flavor and a tender, yielding texture. They contribute significantly to the chili’s heartiness without overpowering other ingredients, making them a reliable choice for a well-balanced bowl.
- Pinto Beans: Pinto beans boast a creamy texture and a distinct, slightly earthy flavor. They are incredibly versatile and blend seamlessly with the other components, enhancing the chili’s depth and providing a comforting, familiar taste.
- Black Beans: Beyond their striking color contrast, black beans offer a dense, meaty texture and a rich, slightly sweet flavor. They are excellent for adding body and complexity, contributing to a more substantial and satisfying chili.
- Chickpeas (Garbanzo Beans): For those seeking a unique textural element, chickpeas are an exciting addition. They retain a slight firmness and offer a nutty flavor, providing an intriguing contrast to the softer beans and shredded chicken.
Remember to drain and rinse all canned beans thoroughly before adding them to your chili to remove excess sodium and improve digestibility.

Choosing and Preparing Your Chicken
For this Buffalo Chicken Chili, boneless, skinless chicken breasts are a popular choice due to their lean profile and ability to shred easily, absorbing all the delicious flavors. However, the versatility of this recipe means you can use various types of chicken to suit your preference and convenience. Chicken thighs, for instance, offer a richer, more succulent flavor and remain incredibly tender when cooked.
When it comes to preparation, convenience is key:
- Shredded Chicken Methods: For perfectly tender, shreddable chicken, both the Instant Pot and Slow Cooker are excellent tools. The pressure cooker quickly infuses flavor and tenderness in minutes, while the slow cooker allows the chicken to simmer gently for hours, resulting in incredibly moist meat that easily falls apart with a fork.
- Cubed & Sautéed Chicken: If you prefer a more defined chicken texture and a quicker stovetop method, simply cut your chicken (breasts or thighs) into 1-inch cubes and sauté them directly in the pot before adding other ingredients. This creates a slightly firmer bite while still allowing the chicken to soak up the chili’s flavors.
- Rotisserie Chicken for Speed: For the ultimate shortcut, a pre-cooked rotisserie chicken is your best friend. Simply shred the meat, discarding any bones or skin, and add it directly to your chili during the simmering stage. This option significantly cuts down on prep and cooking time, making a hearty meal achievable even on the busiest weeknights.
Regardless of your chosen method, the goal is tender, flavorful chicken. Once cooked (or acquired), shred the chicken using two forks or your hands. This creates the ideal texture for chili, allowing the chicken to meld seamlessly with the other ingredients and soak up every drop of that tangy buffalo sauce and aromatic spices, resulting in a truly delicious and satisfying dish.

Crafting Your Delicious Buffalo Chicken Chili
Detailed measurements and full instructions are provided in the comprehensive recipe card at the conclusion of this article. However, here’s a general overview of the simple steps involved in preparing this flavorful chili, focusing on the Instant Pot method for efficiency:
- Sauté Aromatics: Begin by setting your Instant Pot to the “Sauté” function. Add a touch of olive oil, then introduce the minced garlic and chopped onions. Cook them gently for 2-3 minutes, stirring occasionally, until they become fragrant and softened, forming a flavorful base for your chili.
- Build the Flavor Base: Pour in the chicken broth, then add the raw chicken breasts, your chosen beans, diced tomatoes (along with chilies for an extra kick), a spoonful of Better than Bouillon for concentrated flavor, and all the chili seasonings. Stir everything together to ensure an even distribution of spices.
- Pressure Cook to Perfection: Secure the lid on your Instant Pot and set the valve to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting and cook on High Pressure for 20 minutes. This method ensures the chicken becomes incredibly tender and the flavors meld beautifully under pressure.
- Natural Release & Shred: Once the cooking cycle is complete, allow the Instant Pot to naturally release its steam for 10 minutes. This crucial step helps to keep the chicken moist and prevents it from drying out. After 10 minutes, carefully perform a quick release of any remaining pressure. Open the pot and remove the cooked chicken breasts. Using two forks or a knife, shred the chicken into bite-sized pieces, then return the shredded chicken to the pot.
- Finish with Flavor & Simmer: Switch the Instant Pot back to the “Sauté” function. Stir in the buffalo sauce and ranch dressing, along with the frozen corn. Taste the chili and season with salt and pepper as needed. Allow the chili to simmer for another 4-5 minutes, giving the flavors a chance to fully combine and the chili to slightly thicken. Serve hot and enjoy!

Tips for Achieving a Perfectly Thick Chili
A thick, hearty chili is often the goal, and there are several effective strategies to achieve that satisfying consistency without compromising flavor:
- Control Liquid Content: The most fundamental rule is to be mindful of the liquid you add. In this recipe, we begin with just 2 cups of broth. The diced tomatoes and chilies contribute additional liquid, but as the chili simmers, this moisture will naturally reduce and thicken. Avoid adding too much liquid initially; you can always add more later if the chili becomes too thick.
- Increase Bean Quantity: Beans are not just for flavor and protein; they are excellent natural thickeners. By slightly increasing the amount of beans in your chili, you add body and heartiness. For an even thicker consistency, consider mashing about a quarter to a third of the beans against the side of the pot with the back of a spoon. This releases their starchy interior, helping to bind the chili ingredients.
- Simmer Uncovered: If your chili appears too thin after all ingredients are combined, simply allow it to simmer uncovered for an extended period. The open pot facilitates the evaporation of excess moisture, naturally thickening the chili as it cooks down. Stir occasionally to prevent sticking.
- Cornstarch Slurry (Optional): For a quick fix, you can create a cornstarch slurry. Whisk together 1-2 tablespoons of cornstarch with an equal amount of cold water until smooth. Stir this mixture into the simmering chili and cook for a few more minutes until it visibly thickens. Remember, a little goes a long way, so add gradually.
- Masa Harina (Optional): A traditional chili thickener, masa harina (corn flour) adds a subtle, authentic corn flavor along with its thickening properties. Whisk a few tablespoons of masa harina with some chili liquid until smooth, then stir it into the pot. Simmer for 10-15 minutes, allowing it to thicken.

How to Achieve a Creamy Buffalo Chicken Chili
Transforming your Buffalo Chicken Chili into a luxuriously creamy delight is incredibly simple and adds another layer of indulgence. The secret lies in incorporating dairy products towards the end of the cooking process:
- Cream Cheese: Adding a block of softened cream cheese (full-fat or reduced-fat) directly into the simmering chili will melt down and create an incredibly smooth, velvety texture. It also introduces a mild tang that beautifully complements the buffalo sauce. Stir until fully incorporated and no lumps remain.
- Shredded Cheese Blend: For an extra cheesy and creamy consistency, stir in a generous amount of shredded Colby-Jack, cheddar, or a Mexican cheese blend. The cheeses will melt into the hot chili, providing richness and depth. Ensure you stir continuously until the cheese is fully melted and smooth.
- Sour Cream or Greek Yogurt: While often used as a topping, a dollop or two of sour cream or plain Greek yogurt stirred into the pot just before serving can also contribute to a luscious creaminess. Be careful not to boil the chili after adding these, as they can curdle.
These additions not only enhance the texture but also subtly mellow the heat of the buffalo sauce, offering a more balanced and comforting flavor profile.
Is Buffalo Chicken Chili Spicy? Understanding the Heat
Yes, Buffalo Chicken Chili inherently carries a pleasant level of spice, which can be easily customized to your preference. Understanding the difference between buffalo sauce and hot sauce is key to appreciating its unique flavor profile and heat level:
- Hot Sauce vs. Buffalo Sauce: While often confused, hot sauce and buffalo sauce are distinct. Hot sauce is primarily a fiery blend of hot peppers, salt, and vinegar, delivering a straightforward, intense heat. Buffalo sauce, however, takes hot sauce (typically cayenne-based) and enriches it with melted butter and sometimes other seasonings. This addition of butter gives buffalo sauce a smoother, richer, and tangier flavor that tempers the raw heat of the hot sauce, making it more palatable and complex. It’s spicy, but with a more rounded, less aggressive kick.
- Cayenne Pepper Connection: If you’re generally not a fan of cayenne pepper, which is the primary heat source in most classic buffalo sauces, then this chili might be on the spicier side for your taste. The cayenne provides that signature zing and warmth.
- Customizing the Heat: The good news is that you have full control over the spice level. If you prefer a milder chili, start with a smaller amount of buffalo sauce (e.g., 1/4 cup) and taste before adding more. You can also opt for a milder brand of buffalo sauce. For those who crave extra heat, don’t hesitate to increase the buffalo sauce to 3/4 cup or even a full cup, or add an extra pinch of cayenne pepper or a dash of your favorite hot sauce.
- Cooling Components: Remember that creamy toppings like sour cream, Greek yogurt, or blue cheese crumbles can effectively cut through the heat, providing a delightful contrast and making the chili more enjoyable for those sensitive to spice.

Slow Cooker Instructions for Effortless Chili
For a truly hands-off approach that allows flavors to deepen beautifully over several hours, the slow cooker is an excellent method for preparing this Buffalo Chicken Chili. It’s perfect for busy days when you want a hearty meal ready and waiting:
- Combine Ingredients: Add all the primary chili ingredients to your slow cooker: chopped onions, minced garlic, raw chicken breasts (or thighs), chicken broth, Better than Bouillon, all your chosen beans (drained and rinsed), diced tomatoes and chilies (drained), and your chili seasoning blend. Stir everything together to combine well.
- Set It and Forget It: Cover the slow cooker with its lid and cook on the “Low” setting for 8 hours. Alternatively, if you’re in a bit more of a hurry, you can cook it on the “High” setting for 4 hours. The chicken will become wonderfully tender and easy to shred.
- Shred & Finish: Once the cooking time is complete, carefully remove the chicken breasts from the slow cooker. Using two forks, shred the chicken into bite-sized pieces and then return it to the pot. Stir in the frozen corn, buffalo sauce, and ranch dressing. Taste the chili and adjust seasoning with salt and pepper as needed.
- Final Simmer: Allow the chili to warm through for another 15-30 minutes on “Low” to ensure all the new flavors are well integrated and the corn is tender.
This slow cooker method yields a rich, deeply flavored chili with minimal effort, making it ideal for meal prepping or entertaining.
Perfect Pairings for Your Buffalo Chicken Chili
No chili experience is complete without the right accompaniments. This Buffalo Chicken Chili, with its bold and zesty profile, pairs wonderfully with a variety of sides that complement its flavors and textures, offering both contrast and harmony:
- Cornbread: The classic chili pairing, cornbread offers a sweet and crumbly counterpoint to the spicy, savory chili. Whether you prefer a healthier option like Keto Low Carb Cornbread, a quick Air Fryer Cornbread, a zesty Jalapeno Cheddar Cornbread, or a comforting Southern Classic Homemade Cornbread, it’s an essential for scooping up every last drop.
- Cornbread Dressing: For a more substantial side, a savory Southern Cornbread Dressing provides a rich, herby accompaniment that feels incredibly satisfying.
- Crunchy Bread or Crackers: A crusty baguette, warm dinner rolls, or a simple side of saltine crackers offer a satisfying crunch and a neutral base to soak up the chili’s flavorful broth.
- Simple Green Salad: A light, crisp green salad with a simple vinaigrette can provide a refreshing contrast to the richness of the chili, cleansing the palate between bites.
- Rice or Quinoa: Serving the chili over a bed of fluffy white rice or nutrient-rich quinoa can turn it into an even more substantial and complete meal, soaking up the delicious sauce.

Creative Topping Ideas to Elevate Your Chili
Dress up your Buffalo Chicken Chili with an array of fresh and flavorful toppings. These not only add visual appeal but also introduce varying textures and enhance the overall taste experience:
- Shredded Cheese: A classic for a reason! Shredded cheddar, Monterey Jack, or a blend of your favorite cheeses melt beautifully into the warm chili, adding creamy richness.
- Crumbled Blue Cheese: For an authentic buffalo flavor experience, blue cheese crumbles are a must. Their pungent, tangy notes perfectly complement the buffalo sauce and add a delightful sharp contrast.
- Plain Greek Yogurt or Sour Cream: A dollop of cool, creamy Greek yogurt or sour cream helps to mellow the spice and adds a luscious tang, balancing the chili’s heat.
- Sliced Jalapeños: Fresh or pickled jalapeños offer an extra burst of heat and a vibrant crunch, perfect for those who love a spicy kick.
- Cooked and Crumbled Bacon: Crispy bacon bits introduce a smoky, salty dimension that pairs exceptionally well with chicken and buffalo flavors.
- Sliced Avocado: Creamy, cool avocado provides a refreshing counterpoint to the chili’s warmth and spice, adding healthy fats and a smooth texture.
- Crispy Tortilla Strips or Crushed Tortilla Chips: For added crunch and a fun Tex-Mex twist, sprinkle on some homemade tortilla strips or crushed tortilla chips.
- Fresh Cilantro: A scattering of fresh, chopped cilantro adds a bright, herbaceous note that lifts the flavors of the chili.
- Pickled Red Onion: Tangy pickled red onions offer a sharp, slightly sweet, and vinegary bite that cuts through the richness and adds a pop of color.
Storage: How Long Will Buffalo Chicken Chili Last in the Fridge?
Buffalo Chicken Chili is an excellent dish for meal prepping, as it tastes even better the next day when the flavors have had more time to meld. To store it properly and ensure its freshness:
- Refrigeration: Once the chili has cooled to room temperature (within two hours of cooking), transfer it to an airtight container. It will remain fresh and delicious in the refrigerator for 3-4 days. Always ensure it’s tightly covered to prevent any odors from seeping in or out and to maintain its moisture.
- Reheating: When ready to enjoy, simply reheat portions on the stovetop over medium-low heat, stirring occasionally until warmed through, or in the microwave. If the chili has thickened considerably in the fridge, you may want to add a splash of chicken broth or water to reach your desired consistency.

Freezer Tips for Long-Term Storage
Buffalo Chicken Chili freezes exceptionally well, making it perfect for preparing in large batches for future busy days or unexpected cravings. Proper freezing can extend its life for several months without compromising flavor or texture:
- Cool Completely: Before freezing, ensure the chili has cooled completely to room temperature. Freezing hot food can lower the temperature of your freezer and affect other items.
- Portioning: Divide the chili into individual or family-sized portions. This makes thawing and reheating much more convenient. These freezer soup molds from Amazon are fantastic for creating perfect, easy-to-store portions. Alternatively, use freezer-safe containers or heavy-duty freezer bags. If using bags, lay them flat to freeze; once solid, they can be stored upright to save space.
- Freezer Duration: Properly stored, Buffalo Chicken Chili can be kept in the freezer for up to 2-3 months. Beyond this, it may still be safe to eat, but the quality might start to decline.
- Thawing & Reheating: The best way to thaw frozen chili is overnight in the refrigerator. Once thawed, reheat it gently on the stovetop over medium-low heat, stirring frequently, until it’s bubbling and thoroughly warmed through. You may need to add a small amount of chicken broth or water if it’s too thick after thawing. Avoid reheating in the freezer, which can lead to uneven cooking.
Having a stash of this delicious chili in your freezer means you’re always just a reheat away from a satisfying, comforting meal!

Instructions
Instant Pot Method
- Set your Instant Pot to the “Saute” function. Add the olive oil, then the minced garlic and chopped onions. Cook for 2-3 minutes, stirring occasionally, until they are soft and fragrant.
- Pour the chicken broth into the Instant Pot. Next, add the chicken breasts, beans, diced tomatoes and chilies, Better than Bouillon, and all the specified seasonings (reserving salt and pepper for later adjustment).
- Secure the lid and set the valve to “Sealing.” Cook on Manual High-Pressure for 20 minutes.
- Once the cooking cycle finishes, allow the steam to naturally release for 10 minutes. This helps the chicken stay moist. After 10 minutes, carefully quick-release any remaining pressure.
- Open the pot and remove the chicken breasts. Shred them using a knife and fork, then return the shredded chicken to the pot.
- Switch the Instant Pot back to the “Saute” function. Stir in the buffalo sauce, ranch dressing, frozen corn, and season with salt and pepper to taste. Cook for 4-5 minutes, allowing the flavors to meld beautifully.
Slow Cooker Method
- Combine the onions, garlic, chicken breasts (or thighs), chicken broth, Better than Bouillon, all beans, diced tomatoes and chilies, and chili seasoning into the slow cooker pot. Stir gently to mix.
- Cover and cook on “Low” for 8 hours, or on “High” for 4 hours, until the chicken is thoroughly cooked and tender.
- Remove the cooked chicken from the slow cooker, shred it, and then return it to the pot. Stir in the buffalo sauce, ranch dressing, frozen corn, and season with salt and pepper to your preference. Allow to warm through for an additional 15-30 minutes before serving.
Stove Top Method (slice the chicken into 1-inch cubes)
- Place a Dutch oven or large stockpot over medium-high heat. Once hot, add the olive oil and the chicken cubes. Season the chicken with half of the chili seasoning.
- Cook the chicken for 3-4 minutes, stirring, until it is no longer pink on the outside. Remove the chicken from the pot and set it aside.
- If necessary, add a little more olive oil to the pot. Add the chopped onions and sauté for a few minutes until they become soft and translucent.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape the bottom of the pot to deglaze, loosening any browned bits of flavor. Return the cooked chicken to the pot. Add the diced tomatoes and chilies, the remaining chili seasoning, Better than Bouillon, and all the beans. Cover the pot, reduce the heat to medium-low, and simmer for 15 minutes, allowing the flavors to meld.
- Uncover the pot and stir in the buffalo sauce, ranch dressing, frozen corn, and season with salt and pepper to taste. Continue to cook for another 4-5 minutes until all ingredients are well combined and heated through.

Notes
- Adjust Buffalo Sauce: The amount of buffalo sauce can be tailored to your heat preference. When making it for the first time, start with 1/4 cup, taste, and then add more if desired for a spicier kick.
- Thick Chili Preference: If you prefer a very thick chili, begin with just 1 cup of chicken broth and add more gradually if the consistency is too dense.
- Ranch Dressing Option: For ranch lovers, feel free to add more ranch dressing. If you’re not a fan, you can omit it entirely.
- Bean Variety: You have flexibility with the canned beans. Excellent options include Navy Beans, Kidney Beans, Great Northern Beans, and traditional Chili Beans.
- Chili Appearance: Be aware that the types of beans you choose will influence the final color of your chili. Using black beans and red beans, as in this recipe, typically results in a browner appearance.
- Dried Beans: If using dried beans, they require significantly longer cooking times and should be prepared separately before adding them to the chili. Refer to recipes like Instant Pot Black Beans and Instant Pot Red Beans for proper preparation.
- Chicken Type: Any type of chicken can be used (breasts, thighs, etc.) and will not alter the suggested cooking times for the Instant Pot or Slow Cooker.
- Rotisserie Chicken Shortcut: For a quick meal, use a fully cooked rotisserie chicken. In this case, there’s no need for pressure cooking or slow cooking; simply combine all ingredients in a pot and simmer until warmed through.
- Chili Seasoning: While homemade chili seasoning is recommended, you can certainly use a store-bought packet for convenience.
- Creamy Texture: To achieve a rich, creamy texture, stir in cream cheese and/or shredded Colby-Jack cheese during the final simmering stage.
