This quick and effortless pressure cooker recipe transforms simple chicken breasts into a mouth-watering experience, combining the zesty kick of Frank’s Red Hot Buffalo Sauce with the irresistible creaminess of gooey cheddar cheese, all finished with a sprinkle of tangy blue cheese and fresh green onions. Ready in just 30 minutes, this dish is not only a fantastic option for busy weeknight dinners but also an excellent choice for advanced meal prep, ensuring you have delicious, healthy meals throughout your week.
If you’re a fan of our Low-Carb Buffalo Chicken Dip, you’ll find this recipe delightfully familiar yet perfectly optimized for lettuce wraps. We carefully balance the rich flavors by incorporating plain, non-fat Greek yogurt, which not only adds a boost of protein but also contributes to a luscious, creamy texture. A touch of cream cheese further enhances this richness. Unlike the dip, where creaminess is paramount, these wraps require a slightly different consistency, so we adjust the ratios to ensure the filling is perfectly thick and holds its shape within the crisp lettuce cups, providing optimal texture with every bite.

No Instant Pot? No Problem! Slow Cooker Adaptation
Don’t own an Instant Pot? No worries! You can still enjoy these delectable buffalo chicken lettuce wraps by using a slow cooker or Crock-Pot to prepare your chicken breasts. Simply place the chicken and chicken broth into your slow cooker and cook on High for 4 hours, or on Low for 8 hours. This method ensures your chicken is incredibly tender and easy to shred, soaking up all the savory broth flavors. All subsequent steps in the recipe remain identical, making it just as simple to achieve a fantastic meal with minimal fuss. Whether you prefer the speed of the Instant Pot or the set-it-and-forget-it convenience of a slow cooker, this recipe adapts beautifully to your lifestyle.

Embracing Balance: Healthy Eating Without Compromise
I confess, I adore carbs – especially fresh bread and pasta! However, I firmly believe in the power of balance and making healthier choices without sacrificing flavor. My culinary philosophy revolves around proving that nutritious dishes can be incredibly delicious and satisfying, simply by selecting the right combination of ingredients. This Instant Pot Keto Low-Carb Cheesy Buffalo Chicken Lettuce Wrap recipe perfectly embodies this principle. It allows you to indulge in a rich, flavorful meal that caters to a low-carb or keto lifestyle, demonstrating that healthy eating doesn’t mean compromising on taste or enjoyment. It’s about smart substitutions and creative cooking to achieve a delightful culinary experience that aligns with your wellness goals.

The Versatility of Lettuce Wraps: A Low-Carb Canvas
Lettuce wraps are a revelation in the world of low-carb and keto dining, offering an endlessly versatile canvas for creative fillings. They provide a refreshing, crunchy alternative to traditional bread or tortillas, allowing the flavors of your filling to truly shine. Beyond the classic buffalo chicken, the possibilities are immense! For another fantastic low-carb option, be sure to explore my Low-Carb Spicy Carne Asada Steak Lettuce Wraps. Imagine Asian-inspired chicken or pork fillings, savory ground turkey with Mediterranean spices, or even a fresh tuna salad. Lettuce wraps are perfect for anyone looking to reduce carb intake while still enjoying vibrant, satisfying meals. Their natural crispness and subtle flavor complement a wide array of ingredients, making them a staple for healthy and delicious eating.

Why the Instant Pot is Your Weeknight Hero
The Instant Pot isn’t just a kitchen gadget; it’s a game-changer for anyone navigating a busy lifestyle. What I truly appreciate about this appliance is its ability to transform cooking into a streamlined, stress-free process. For this recipe, I simply place the chicken breasts and broth into the pot, set the timer, and let the pressure cooker work its magic. While the chicken cooks to tender perfection, I have ample time to prepare the remaining ingredients – chopping green onions, shredding cheese, and arranging the lettuce. This hands-off approach to cooking protein is invaluable, allowing me to multitask or simply unwind, knowing that a delicious, healthy meal is effortlessly coming together. The Instant Pot consistently delivers incredibly tender chicken, making shredding a breeze and ensuring your buffalo chicken filling is perfectly succulent every time.

Choosing the Perfect Lettuce for Your Wraps
The foundation of any great lettuce wrap is, of course, the lettuce itself. For these buffalo chicken wraps, I highly recommend using romaine hearts. Their sturdy, elongated leaves are perfectly shaped to hold a generous amount of filling without tearing, providing a satisfying crunch with every bite. Romaine’s mild flavor also allows the bold buffalo chicken to take center stage. However, feel free to experiment with other varieties like butter lettuce or bibb lettuce, which offer a softer, more pliable texture, creating a delicate wrap experience. Whichever you choose, ensure the leaves are thoroughly washed and dried to maintain maximum crispness and prevent your wraps from becoming soggy.
Elevating Your Wraps: Toppings and Variations
While the core buffalo chicken mixture is fantastic on its own, the toppings are where you can truly customize your wraps and add extra layers of flavor and texture. I typically use crumbled blue cheese for its sharp, tangy notes that perfectly complement the spice. For those who prefer a creamier finish, a drizzle of keto-friendly blue cheese dressing or ranch dressing works wonderfully. Consider adding a few slices of fresh avocado for healthy fats and a cooling contrast, or a sprinkle of chopped fresh cilantro or chives for an herbaceous touch. If you like extra heat, a dash of your favorite hot sauce or some thinly sliced jalapeños can really kick things up a notch. Don’t be afraid to get creative and make these wraps uniquely yours!

Serving Suggestions for a Complete Meal
These Instant Pot Keto Low-Carb Cheesy Buffalo Chicken Lettuce Wraps are incredibly satisfying on their own, with one wrap often being enough for a fulfilling meal. However, if you’re looking to create a more substantial spread, they pair beautifully with a variety of keto-friendly side dishes. I often enjoy them with a side of perfectly sautéed mushrooms, their earthy flavor providing a lovely contrast to the spicy chicken. Steamed broccoli is another excellent choice, offering a fresh, green crunch. Other fantastic options include roasted asparagus, a simple garden salad with a low-carb dressing, or even a side of cauliflower rice to absorb any extra sauce. This recipe is wonderfully versatile, ensuring you can easily tailor it to your preferences for a truly wholesome and delicious dining experience.
Mastering Meal Prep for a Healthy Week
For those committed to healthy eating, meal prepping is an indispensable tool, and these buffalo chicken lettuce wraps are perfect for it! On weekends, I love to prepare my lunches for the upcoming work week. The key to successful meal prep with this recipe is keeping components separate to maintain freshness and texture. I store the crisp romaine lettuce leaves in large plastic Ziploc bags, ensuring they remain perfectly crunchy. The shredded buffalo chicken mixture and crumbled blue cheese are packed into separate airtight Tupperware containers. This strategic packing allows me to easily reheat the chicken filling each day without compromising the crispness of the lettuce. The result? A fresh, crunchy, and incredibly satisfying lettuce wrap experience every single day, making healthy eating convenient and enjoyable even on the busiest of schedules.

Ingredients
- 2 skinless chicken breasts
- 1 cup low-sodium chicken broth
- ¾ cup buffalo sauce I used Frank’s Red Hot
- 1 oz cream cheese
- ½ cup shredded cheddar cheese
- 1 tablespoon plain Greek yogurt
- McCormick’s Grill Mates Chicken Seasoning to taste
- Salt and pepper to taste
- 4 slices Romaine lettuce
- Crumbled blue cheese
- 1 green onion chopped
Instructions
- Add the chicken breasts and chicken broth to the Instant Pot.
- Close the pot and seal the lid. Cook for 10 minutes using the Manual or Pressure Cook setting on High pressure.
- Once the Instant Pot completes its cooking cycle and beeps, allow the steam to naturally release for 10 minutes. Do not perform a quick release.
- Carefully open the pot and remove the cooked chicken breasts. Using two forks or a knife and fork, shred the chicken to your desired consistency.
- Drain any leftover chicken broth from the Instant Pot, leaving the pot ready for the next step.
- Return the Instant Pot to the sauté function.
- Add the shredded chicken back into the pot.
- Introduce the buffalo sauce, cream cheese, Greek yogurt, shredded cheddar cheese, chicken seasoning, and a pinch of salt and pepper to the pot. Stir continuously to thoroughly combine all ingredients.
- Cook for 2-3 minutes, or until all the cheese has completely melted and the mixture is warm and creamy.
- Assemble your lettuce wraps by spooning the hot buffalo chicken mixture into the romaine lettuce cups. Garnish generously with crumbled blue cheese and freshly chopped green onions before serving.

Notes
Should you not have an Instant Pot, these flavorful chicken breasts can be effortlessly prepared in a slow cooker or Crock-Pot. Simply cook the chicken in chicken broth for 4 hours on High or 8 hours on Low. All other instructions in the recipe remain consistent, ensuring delicious results.
As the chicken is cooked directly in chicken broth, it will naturally absorb some savory flavors. Exercise caution when adding additional seasoning, salt, and pepper, as the recipe typically requires minimal adjustments. Start with a small amount, taste, and then adjust according to your preference.
For the best lettuce wraps, I highly recommend using romaine hearts. Their generous size and crisp texture are ideal for holding ample filling per serving. Alternatively, butter lettuce or bibb lettuce can also be used for a softer wrap experience.
I prefer the pungent flavor of crumbled blue cheese for this recipe. However, if you’re looking for an alternative or an extra creamy touch, feel free to drizzle a keto-friendly blue cheese dressing over your wraps. It’s a fantastic addition that I plan to try next time!
