Ingredients
- 8 tablespoons butter, softened (1 stick)
- ⅓ cup granulated sugar or sweetener (recommendation)

- ½ cup chopped walnuts (recommendation), optional
- Optional sea salt for sprinkling (recommendation)
Instructions
- Cream butter, granulated sugar (or sweetener), and packed light brown sugar (or sweetener) in a mixing bowl using a stand or hand mixer on medium speed for about 2 minutes, until light and fluffy.
- Add the room temperature egg, vanilla extract, and freshly squeezed lemon juice. Blend on low speed for 30 seconds, then increase to medium speed for a couple of minutes until the mixture is light and fluffy, scraping down the bowl as needed.
- With the mixer on low speed, add the all-purpose flour, rolled oats, baking soda, salt, and cinnamon. Blend for approximately 45 seconds, just until combined. Be careful not to overmix the dough.
- Gently fold in the chocolate chips and chopped walnuts (if using) with a spatula until evenly distributed.
- Line the air fryer basket with air fryer parchment paper. Scoop the cookie dough into balls, each about 2 tablespoons in size, and place them in the basket about 1½ to 2 inches apart. Use wet hands to gently flatten the tops of the cookies, as the dough can be quite sticky.
- Air fry the cookies at 300°F (150°C) for 6-8 minutes. Cooking time may vary slightly depending on your air fryer model.
- Once baked, carefully remove the air fryer basket. Allow the cookies to cool in the basket for 5 minutes. This step is crucial, as they will be fragile and crumble if handled too soon.
- After 5 minutes, transfer the cookies to a wire rack to cool for an additional 10 minutes, allowing them to fully set and achieve their perfect texture.
- Optionally, sprinkle with a pinch of sea salt before serving for an extra touch of flavor.

- You can pulse the rolled oats in a food processor if you prefer a finer texture, but it’s not strictly necessary. The oats integrate well without compromising the cookie’s texture.
- Both salted or unsalted butter can be used, depending on your preference. If using salted butter, you might consider slightly reducing the added salt in the recipe.
- If you omit the rolled oats, the cookies will have a slightly different texture, being perhaps a bit less chewy.
