- 16 oz frozen cauliflower (I used a steamable bag)
- 1 tablespoon olive oil
- ½ cup chopped onion
- 2 garlic cloves, chopped
- 4 oz cream cheese
- 1 cup sour cream
- 2 cups (divided) shredded cheddar cheese (I used blocked cheese and shredded)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon red cayenne pepper (if you prefer a kick)
- salt and pepper to taste
- cooking oil spray (I used olive oil)
- ¾ cup enchilada sauce (I used Trader Joe’s no-sugar added sauce. See recipe notes below for instructions on how to make your own sauce.)

Instructions
Preparing Shredded Chicken (Choose Your Method)
Baked Method: Preheat oven to 350 degrees F (175 C). Place chicken breasts on parchment paper on a sheet pan. Season generously with salt and pepper. Bake for 35 minutes, or until the chicken reaches an internal temperature of 165 degrees F (74 C), as confirmed with a meat thermometer. Remove from oven and shred using two forks or knives.
Instant Pot Method: Add chicken broth, chicken breasts, salt, and pepper to the Instant Pot. Secure the lid and seal. Cook on Manual High-Pressure for 10 minutes. Once cooking is complete, allow the steam to naturally release for 10 minutes before manually releasing any remaining pressure. Remove chicken and shred.
Slow Cooker Method: Add chicken broth, chicken breasts, salt, and pepper to the slow cooker. Place the lid on the cooker. Cook on Low for 8 hours or on High for 4 hours. Once cooked, remove the chicken and shred.
Casserole Assembly
Preheat your oven to 350 degrees F (175 C).
Cook the frozen cauliflower according to package instructions (typically in the microwave or steamed). Once cooked, mash thoroughly using an immersion blender, or transfer to a high-powered blender and blend for 30-45 seconds until smooth and mashed.
In a skillet, heat olive oil over medium-high heat. Add chopped onions and garlic and sauté for 2-3 minutes until they become soft and fragrant.
Reduce heat to medium. Add cream cheese, sour cream, and 1 cup of the shredded cheddar cheese to the skillet. Season with salt, pepper, cumin, and chili powder. Stir continuously for a couple of minutes until the cheeses are fully melted and combined into a smooth, creamy sauce.
Stir the shredded chicken into the cheese mixture in the skillet, ensuring it’s well coated.
Lightly spray a 9X13 baking dish with cooking oil. Spread half of the chicken and cheese mixture evenly in the bottom of the dish.
Carefully layer the cauliflower mash over the chicken and cheese mixture.
Pour the enchilada sauce evenly over the cauliflower mash layer, then sprinkle with the remaining 1 cup of shredded cheddar cheese.
Bake for 15-20 minutes, or until the cheese is fully melted, bubbly, and slightly golden at the edges.
Allow the casserole to cool and set for at least 10-15 minutes before slicing and serving. This is a softer casserole compared to most, especially with the mashed cauliflower top. Letting it stand will help it firm up and make for cleaner portions. It will continue to harden further once refrigerated.
